15 months

When Daniel was born, I initially thought that I would just do these monthly posts until he was one year old, but after doing this for over a year, it seems odd to just quit!

Daniel went back to the doctor this week for his follow up appointment on his gross motor skills. Although he has improved in the other areas (pointing, clapping, waving, etc) he still isn’t walking. Despite my best efforts, this little munchkin does not want to walk. When I say he doesn’t want to, I mean, he HATES for me to even encourage it by making him “get on his feet.” He has taken a few steps on his own but it’s almost involuntary. I am not sure he even realizes that he is doing it because he is MAD the entire time. The doctor has referred him to get some early intervention physical therapy. I know that it seems extreme, but I am honestly thankful that we are getting some extra help. I think he really needs the push. I am not convinced it will work, but we shall see.

Eating:

LESS PICKY! I am so thankful. Seems to be eating one or two good times a day and not so hungry for dinner. Nursing twice a day.

limits..they don’t exist

I am not sure how many more loads of poopy laundry I will possibly have to wash this week, or today for that matter. I am not sure how many more times I will have to walk into Daniels room and smell diarrhea or vomit or both and proceed to have to clean it all up. I am not sure how many more times I can do this, this week. I guess how ever many more times he needs me to do it. Motherhood.

We are members!

Our family became members in the hopes that we are making a step in the right direction to become fit and healthy!

I went three times last week (allowing some time for my body to heal) and really enjoy the time to work out my body, and focus on something for me. Daniel gets to meet new friends, too!

I can tell that I am a NEWBIE just by the fitness levels of all that seem to be around me. It’s condemning yet at the same time, encouraging. I can get there too, right?!

His independent play is amazing to me!

I finally caught Daniel on camera focusing SOO closely on his imaginative play! He spent probably 30-40 minutes in his room today just “vrooming” his car over this toy like it was a road course or something. . .

I texted Dennis to come in and “catch” him playing, and when he came in Daniel heard him immediately!

Dennis gave him some “pointers” on playing with the car and how to use books as his roads, etc. Daniel took the advice.

Handmade wallets.

 

Last week I bought some material to make some home made wallets! This is how it started…IMG_5201

This last wallet posted was the very first one I made that night, and I just didn’t love it as much as the first one. You can see a lot of stitching mistakes and whatnot, but it’s “special” because it was the first one!

Parmesan Encrusted Pork Tenderloin

I know it seems as if I have been posting a lot about food, but it just so happens that we have been eating a lot more at home, forcing me to get creative! I

I made this recipe up, but I enjoyed it thoroughly!

1 pork tenderloin, plain.

1/2 stick of butter

salt & pepper

Mayonnaise

any type of shredded cheese

parmesan cheese.

1. preheat oven to 350

2. place raw tenderloin onto aluminum foil big enough to cover it up.

3. salt and pepper the top. Add a small amount of chili powder

4. cut 4 slivers of butter and space it across the tenerloin

5. cover and bake for 30-35 minutes.

6. Bring out of oven.

7. Slice 5 or 6 cuts into the tenderloin, cutting against the grain of the meat

8. Insert shredded cheese into each little pocket

9. Cover top with mayonnaise, top with shredded cheese and shredded cheese, bake until top is golden brown and crispy looking.

10. Serve hot.

Caution: Do not add too much salt to this recipe, with the salted butter, and mayo, it had a hint of a salty flavor.

Mmmmm………

Any of you all fans of the Cilantro-lime Rice served at Chipotle?!?! I love it so much that I just wished that there was a way that I could have it at my own home whenever I wanted.

Well………..

I found a way!!!! I found a recipe that was supposedly “leaked” out by a former employee! So, I gave it try and BOTH times I have been PLEASED! It truly tastes the same!

So, because I am kind, I will share with you the recipe that I served on a whole wheat tortilla with sautéed chicken, onions, peppers, queso shredded cheese, lettuce, and sour cream! Simply scrumptious!

1 teaspoon of butter

2 tsps fresh cilantro

2/3 cup of white rice

1 cup water

1/2 tsp of (kosher) salt

1 Lime (or 1 tbs of juice)

In a 2 quart heavy sauce pan, heat butter over low heat, stirring occasionally until melted. Add rice, and lime juice, stir for one minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes (I found it to be quicker). Fluff with a fork. Before serving, stir in cilantro.

BE AWARE: this will only make about two small servings leaving no room for seconds. The second time I made it, I tripled the recipe, and it allowed us seconds and enough for me to have some tomorrow for lunch! The original recipe called for basmati rice, but this to me tasted just fine using regular white minute rice. Also, I used kosher salt which really gives it more of an authentic “Chipotle” flavor, but regular salt will work just fine!
