Mmmmm………

Any of you all fans of the Cilantro-lime Rice served at Chipotle?!?! I love it so much that I just wished that there was a way that I could have it at my own home whenever I wanted.

Well………..

I found a way!!!! I found a recipe that was supposedly “leaked” out by a former employee! So, I gave it try and BOTH times I have been PLEASED! It truly tastes the same!

So, because I am kind, I will share with you the recipe that I served on a whole wheat tortilla with sautéed chicken, onions, peppers, queso shredded cheese, lettuce, and sour cream! Simply scrumptious!

1 teaspoon of butter

2 tsps fresh cilantro

2/3 cup of white rice

1 cup water

1/2 tsp of (kosher) salt

1 Lime (or 1 tbs of juice)

In a 2 quart heavy sauce pan, heat butter over low heat, stirring occasionally until melted. Add rice, and lime juice, stir for one minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes (I found it to be quicker). Fluff with a fork. Before serving, stir in cilantro.

BE AWARE: this will only make about two small servings leaving no room for seconds. The second time I made it, I tripled the recipe, and it allowed us seconds and enough for me to have some tomorrow for lunch! The original recipe called for basmati rice, but this to me tasted just fine using regular white minute rice. Also, I used kosher salt which really gives it more of an authentic “Chipotle” flavor, but regular salt will work just fine!
